A British rocky road recipe with marshmallows, dark chocolate, golden syrup, and Oreo cookies. The easiest Oreo rocky road recipe, and a fun twist on the classic confectionery treat.

What Inspired This Oreo Rocky Road Recipe?
One of the best things about moving to England for pastry school? Discovering an entirely new world of chocolates, confections, and sweets. Freddos, After Eights, Celebrations, Malteasers, Terry’s Chocolate Oranges, clotted cream fudge, an entire world of Cabury chocolate bars, (Cadbury with Daim is my all-time fave!) and of course, rocky road, a sweet, fudge-like treat comprised of marshmallows, chocolate, and crushed-up cookies.
In America, “rocky road” refers to chocolate-nut-and marshmallow ice cream. Its British counterpart features a similar ingredient profile, but in the form of a fudge-like confection. Think of it as a cousin to American-style “quick” fudge.
British rocky road recipes usually include some combination of chocolate, butter, golden syrup (a sweet, amber-colored syrup similar to honey), crushed digestive biscuits, and mini marshmallows. It’s super simple to make (just melt the chocolate, add the mix-ins, pour into a pan, chill, and slice) and is a mainstay at school bake sales and celebrations. There are also plenty of rocky road inspired “slice” recipes, with classic rocky road ingredients layered on top of a crisp cereal base.
Although you can buy packaged rocky road at any UK supermarket, it didn’t take long for me to start experimenting with recipes at home. This version is one of my favorites. Combining my lifelong love of Oreos with my affection for rocky road, this rocky road recipe offers fun Oreo twist on the classic British treat.
Oreo Rocky Road Ingredients
To make this Oreo rocky road recipe, start by gathering the following ingredients:
- Dark Chocolate – You’ll need 300 grams (14 ounces) of dark chocolate. Opt for good-tasting, good-quality chopped chocolate or callets, rather than chocolate chips.
- Unsalted Butter – Very soft. Do not use cold butter; it won’t blend smoothly into the warm chocolate.
- Golden Syrup – This amber-colored, honey-like syrup is a staple in many British baking and pastry recipes. In rocky road, it adds sweetness and prevents the finished candy from being difficult to bite. My go-to is Lyle’s Golden Syrup, which is readily available on Amazon. (If you have some left over, save it to make my cherry almond blondies or this rainbow rocky road slice!) And if you can’t find golden syrup, you can substitute light corn syrup or Karo syrup instead.
- Oreo Cookies – I’ve stirred 150 grams, or about 14 single-stuffed Oreos, into the melted chocolate to create the rocky road base, and added a few more chopped cookies to the top of the slab for decoration. (Save the rest of the cookies! They’re great in my Oreo icebox cake, Oreo ice cream, or these bakery style cookies with Oreos.)
- Mini Marshmallows – You’ll need 100 grams, or 3 1/2 ounces, of mini marshmallows. I recommend measuring marshmallows by weight rather than volume, but in a pinch, 100 grams should equal roughly 2 US cups.
Rocky Road Recipe Variations
In its most classic form, rocky road contains chocolate, marshmallows, digestive biscuits, and sometimes, chopped nuts or glacé cherries. But one of my favorite things about this easy-to-make confection is its versatility. You can change up the chocolate, the mix-ins, and even the marshmallows to suit your preferences. Some suggestions include:
- Use Different Oreos – Replace the plain Oreos with peanut butter, double chocolate, or lemon. Create a themed treat, like mint Oreos + bits of crushed peppermint candy; or birthday cake + rainbow sprinkles. Or, replace the Oreos with digestive biscuits, bourbon biscuits, or graham crackers.
- Change the Chocolate – White chocolate can be finicky, with a tendency to sieze when combined with other ingredients. I suggest sticking with dark, semi-sweet, or milk chocolate for this recipe, or a blend of milk and dark.
- Add Other Mix-Ins – Stir in other ingredients such as chopped walnuts, peanuts, or pecans; glacé cherries; raisins, dried cranberries, or other dried fruit; chocolate sunflower seeds; M&Ms; or crushed pretzels or potato chips.
Make-Ahead and Storage Suggestions
Store leftover Oreo rocky road in an airtight container in the refrigerator for up to one week. For the optimal consistency, allow refrigerated rocky road to stand at room temperature for 15-30 minutes prior to serving.

Ingredients
300 grams chopped dark chocolate (14 ounces)
90 grams unsalted butter, softened (6 tablespoons)
40 grams golden syrup (2 tablespoons)
150 grams Oreos, chopped (about 14 single-stuffed Oreos), plus more to decorate
100 grams mini marshmallows (about 2 cups)
Instructions
Line an 8×8-inch square pan with parchment, and spray with nonstick spray. Set aside.

Add dark chocolate to the top of a double boiler, or sit a large metal bowl over a stock pot of simmering water to create a bain-marie. Melt chocolate, stirring periodically, until completely melted.

Add butter and golden syrup and whisk gently to combine.

Remove from heat. Set aside and allow chocolate to cool for 25-30 minutes, or until very warm but not hot to the touch.

With a rubber spatula, fold in crushed Oreos and mini marshmallows. Stir until melted chocolate thoroughly coats all ingredients.


Pour into prepared tin. Use a rubber spatula to spread, pushing down gently to press the mixture into the tin.


Press extra Oreo pieces on top to decorate.

Cover pan with plastic wrap. Refrigerate 2 hours, or until chocolate sets.

Transfer slab to a cutting board. With a sharp chef’s knife, slice into squares and serve.

Store leftover rocky road in an airtight container in the refrigerator for up to 1 week.
