Everything Bagel Bread

Description

This bread captures all of the best flavors of an everything bagel. It features a white bread dough chock full of garlic, sesame seeds, and poppy seeds, and lots of everything bagel seasoning!


Ingredients

Scale

250 milliliters lukewarm water (1 1/8 cup)
8 grams instant yeast (about 2.5 teaspoons)
2 tablespoons sugar
400 grams flour (strong bread, all-purpose, or any combination of the two) (3 1/8 cups)
1 tablespoon olive oil (plus more for greasing bowl)
1 teaspoon poppyseeds
1 teaspoon sesame seeds
1 teaspoon garlic powder
1 teaspoon salt
Everything bagel seasoning blend, for coating the loaf


Instructions

In a large bowl, dissolve the instant yeast and sugar in the lukewarm water.

Sieve in the flour into the bowl, then add the olive oil, seeds, garlic powder, and salt.

Use a bench scraper to combine the ingredients until a soft dough has formed.

Turn dough out on a lightly floured countertop. Knead by hand until dough is soft and elastic, about 8-10 minutes.

Form the dough into a ball and place in an oiled mixing bowl, drizzling the top of the dough in more oil.

Cover and let stand in a warm place for 1-1.5 hours, or until dough has doubled in size.

Punch dough down. Form into a ball and roll in everything bagel seasoning, generously coating the entire surface.

Place ball on a parchment-lined baking tray. Cover with clingfilm/plastic wrap and allow to rise until doubled in size, about 1 hour.

Preheat oven to 200° C / 390° F.

Uncover bread and use a bread lame or scissors to score as desired. Bake for 40 minutes, or until loaf is nicely golden brown. Transfer to a wire rack and allow to cool completely prior to serving.

Bread is best enjoyed on the day it is made. It also freezes well!

 

Notes

You can use any brand of everything bagel seasoning for this recipe. Many people swear by the Trader Joe’s blend. These days, most grocery stores also carry everything bagel seasoning. If you don’t have everything bagel seasoning on hand, you can also make your own.

I’ve made this bread using strong bread flour, all-purpose flour, and with a mix of the two, so feel free to use whichever blend you prefer. You could also try blending in some whole wheat flour (King Arthur makes a good one) for a slightly more nutritious loaf.
