A grapefruit sorbet recipe made by infusing grapefruit juice with sprigs of fresh rosemary, then churned in a countertop ice cream maker.
200 grams granulated sugar (1 cup)
1 6-inch sprig fresh rosemary
960 milliliters freshly squeezed pink grapefruit juice (4 cups; about 6 grapefruit), divided
30 milliliters lemon juice (2 tablespoons)
1 tablespoon rum or vodka, optional, to prevent freezing
In a small saucepan, stir together granulated sugar and 240 milliliters (1 cup) grapefruit juice. Cook over medium heat, stirring occasionally, until sugar dissolves.

Add the rosemary sprig and simmer until liquid turns syrupy, about 5 minutes. Remove from heat. Cover and let stand until lukewarm, about 15 minutes.

With kitchen tongs, discard the rosemary.

In a large bowl, whisk remaining grapefruit juice with lemon juice and alcohol, if using. Whisk in the rosemary-infused grapefruit juice.

Cover and refrigerate, at least 6-8 hours, or overnight.
Pour chilled base into an ice cream maker, with bowl frozen according to manufacturer’s instructions. Churn until thick and creamy, about 15 minutes.

Scoop into a freezer-safe plastic container, or cardboard pint containers. Freeze 3-4 hours, or until sorbet reaches a scoopable consistency. Scoop into dishes and serve.


Store leftover grapefruit sorbet in the freezer for up to 2 weeks.
