Strawberry Sugar Recipe

An easy, two-ingredient strawberry sugar recipe made with freeze dried berries and granulated sugar.

Ingredients

25 grams freeze dried strawberry pieces (1/2 cup)
350 grams granulated sugar (1 3/4 cups), divided


Instructions

In the bowl of a food processor, blitz the freeze dried strawberry pieces and 50 grams (1/4 cup) granulated sugar on high speed until a fine powder forms, about 30 seconds.

In a small bowl, whisk together strawberry powder and remaining granulated sugar.

Use as desired.

Store strawberry sugar in an airtight container at room temperature for up to 3 months.

Notes

Take time to thoroughly dry the food processor bowl before blitzing the berries and sugar. Similarly, your airtight container must be totally dry before transferring the finished sugar for storage. Moisture can cause the sugar to turn sticky and clumpy.

If you don’t have a food processor, you can grind the freeze-dried berries in a standard household coffee grinder instead, as I’ve done in my lavender sugar cubes recipe. You may need to work in smaller batches, rather than grinding the berries all at once.
