An easy, two-ingredient strawberry sugar recipe made with freeze dried berries and granulated sugar. Ideal for baking, sweetening hot beverages, garnishing cocktail glasses, or sharing with friends and family as a homemade gift.

Why Make This Strawberry Sugar Recipe?
I’m very much a “summer” person. Sundresses and sandals; neon nail polish; long days with plenty of sunlight; outdoor festivals; farmer’s markets; free concerts and movies in the park. What’s not to love?
Best of all, summer means fresh, locally grown strawberries, and that means months of homemade strawberry compote, strawberry ice cream, and Eton mess. I’ll never tire of working fresh strawberries into my recipe repertoire.
While this strawberry sugar recipe uses freeze dried berries rather than fresh, it makes a great finishing touch for fresh strawberry recipes, like strawberry muffins or a warm strawberry galette. Plus, this recipe requires just two ingredients and about five minutes of prep time, so you can have a jar of homemade strawberry sugar at the ready all summer long.

Strawberry Sugar Ingredients
To make homemade strawberry sugar, you’ll need:
- Freeze Dried Strawberry Pieces – Because you’ll start by grinding the berries in a food processor, whole freeze dried strawberries, crushed freeze dried strawberries, or freeze dried strawberry pieces are all suitable for this recipe. If you have some left over, save the extra berries to make an Oreo strawberry pie, or to garnish slices of Nutella puff pastry pizza.

- Granulated Sugar – While caster (superfine) sugar works best for delicate meringues and macarons, I prefer the larger grains of granulated sugar when making flavored sugars and sugar cubes.
How to Make Strawberry Sugar
To make strawberry sugar, combine freeze dried strawberries and a few tablespoons of granulated sugar in the bowl of a food processor, and blitz on high speed until a fine powder forms. (Do not add all of the granulated sugar to the food processor—see my notes below!) Then, add the strawberry powder to a large bowl, along with more granulated sugar:

Whisk everything together, and that’s it! Your strawberry sugar is ready to use as desired.

How to Use Strawberry Sugar
Baking: Use homemade strawberry sugar to make palmiers, roll logs of slice and bake shortbread, or coat balls of unbaked cookie dough. Decorate sugar cookies or sand tarts, or sprinkle it over strawberry muffins instead of Demerara sugar.


Breakfast: Sprinkle strawberry sugar over fresh berries or a berry smoothie bowl. Sweeten Greek yogurt, oatmeal, or jars of chocolate strawberry overnight oats.
Beverages: Stir strawberry sugar into beverages like coffee, tea, hot chocolate, or strawberry rhubarb lemonade. Make strawberry cocktails and dip the rim of each glass in strawberry sugar for a sweet finishing touch.
Recipe Tips
Take time to thoroughly dry the food processor bowl before blitzing the berries and sugar. Similarly, make sure your airtight container is totally dry before transferring the sugar for storage—moisture can cause it to turn sticky and clumpy.
If you don’t have a food processor, you can grind the freeze-dried berries in a standard household coffee grinder instead, as I’ve done in my lavender sugar cubes recipe. Note that you may need to work in smaller batches, rather than grinding all of the berries at once.
Do not add all of the granulated sugar to the food processor. While a quick blitz in the food processor offers a great hack for turning granulated sugar into powdered sugar, that is not what we’re going for here!
Make-Ahead and Storage Suggestions
Store homemade strawberry sugar in an airtight container at room temperature for up to 3 months. Or, scoop into pretty glass jars for a unique homemade gift.

An easy, two-ingredient strawberry sugar recipe made with freeze dried berries and granulated sugar.
Ingredients
25 grams freeze dried strawberry pieces (1/2 cup)
350 grams granulated sugar (1 3/4 cups), divided
Instructions
In the bowl of a food processor, blitz the freeze dried strawberry pieces and 50 grams (1/4 cup) granulated sugar on high speed until a fine powder forms, about 30 seconds.

In a small bowl, whisk together strawberry powder and remaining granulated sugar.

Use as desired.
Store strawberry sugar in an airtight container at room temperature for up to 3 months.
