What Inspired This Rainbow Potpourri Simmer Pot?

During Pride month, I love finding ways to work rainbows into my recipes. Take these rainbow gummy bears, for example, or these rainbow sandwich cookies filled with my go-to rainbow buttercream frosting.

If you’ve been following me for any length of time, you also know how much I love making simmer pots. I’m not a big fan of artificial room sprays and air fresheners, but I do love freshening up my living space, and stovetop simmer pots provide a natural and affordable way to do just that.

In this recipe, I’ve combined my love of simmer pots with my love of all things rainbow. The result? A rainbow potpourri simmer pot featuring vibrant red strawberries, orange oranges (duh!), yellow lemons, green herbs, blue butterfly pea flowers, and purple lavender for a June-inspired simmer pot that captures both the scents of summer, and the colors of Pride.

Rainbow Simmer Pot Ingredients

To make this colorful rainbow simmer pot potpourri, you’ll need the following ingredients:

  • Strawberries – For vibrant color and scent, use fresh strawberries for this simmer pot, not frozen.
  • Orange – You’ll need half of a navel orange, sliced very thinly so the slices float on top of the water.
  • Lemon – I used 1 small lemon, thinly sliced.
  • Fresh Herbs – You can use fresh mint, fresh basil, or any other fresh, bright green herb you’d like.

What is the Best Pot for Making a Stovetop Simmer Pot?

I like to use a large stock pot (the kind you’d use for making homemade soup) for my simmer pots, but any medium saucepan will also work. I frequently make mini simmer pots—just halve the ingredients and reduce the amount of water, so everything fits in the saucepan.

Re-Using This Potpourri Simmer Pot

After you’ve assembled and enjoyed your simmer pot, you can save and re-use it 1-2 more times. Remove from the stove and cover the pot with a lid, then top up with fresh water when ready to reuse. I also suggest straining out the strawberries and replacing with fresh ones for the next simmer, since they tend to turn mushy and brown after a few hours.

Safety Considerations

Keep an eye on the pot and add more water as needed. Do not allow the simmer pot to run dry, and do not leave unattended on the stovetop.

While this simmer pot recipe contains edible ingredients, it is not meant to be eaten. After simmering, cool the contents then pass through a colander or fine mesh strainer to drain the liquid. Dispose in the food waste or compost bin, or with regular household waste.

Ingredients

4-5 strawberries, sliced
1/2 navel orange, sliced
1 lemon, sliced
2-3 sprigs fresh mint or basil
7 grams butterfly pea flowers (1/4 cup)
7 grams culinary dried lavender (1/4 cup)

Instructions

Fill a large stock pot with water, allowing a few inches of space at the top of the pot.

Add all ingredients to the pot.

Bring to a gentle simmer on the stovetop.

Simmer over low heat for as long as desired, topping up with additional water as needed.
