It’s both easy and affordable to make your own lavender simple syrup at home. With just a few ingredients and an hour or so in the kitchen, you can create a versatile sweetener for coffee, cakes, and cocktails. Add a fragrant floral note to your culinary creations by brushing lavender syrup on homemade baked goods, stirring it into a pitcher of cold brew or lemonade, or making fancy mixed drinks to impress summer cocktail party guests.

As a bonus, you can store this homemade lavender simple syrup in the fridge for several weeks. I suggest making a batch to keep it on hand for flavoring iced drinks and cocktails all summer long.

Lavender Syrup Ingredients

To make homemade lavender syrup, you’ll need three ingredients: water, granulated sugarand dried lavender flowers.

When choosing dried lavender, select a product clearly marked as food safe or culinary grade, or one indicating that it can be used in baking. (They usually come in a large bag—save the rest to make lavender hot chocolate, lavender ice cream, or lavender sugar cubes!) Do not use anything not labelled as food safe.

How to Make Lavender Simple Syrup

To make lavender syrup, start by warming culinary-grade dried lavender flowers and water in a saucepan. Then, stir in granulated sugar and allow it to dissolve; simmer for 10 minutes; and steep for one hour.  After steeping, pass the infused syrup through a fine mesh strainer to remove the flowers.

Uses for Homemade Lavender Syrup

This syrup is incredibly versatile. Brush it on homemade cakes and cupcakes; stir it into iced tea or cold brew coffee; make a pitcher of lavender lemonade for a refreshing summer beverage; drizzle it on Greek yogurt, cottage cheese, or oatmeal for breakfast; or treat yourself to a fancy lavender cocktail.

Choosing Dried Lavender Flowers

The key to creating a vibrant homemade lavender simple syrup? Choosing the best dried lavender.

Remember that not all dried flower products are suitable for human consumption. When purchasing your dried lavender flowers, select a product clearly labelled as edible, food-safe, or culinary grade, or one indicating that it can be used in baking. Do not use anything not marked as such.

Culinary dried lavender tends to come in big bags, so you’ll probably have quite a bit left over. I suggest using the leftovers to make a batch of my lavender lemon cookies. Lavender Simple Syrup Recipe Tips

Pay attention during the straining step! Don’t make the all-too-common cooking mistake of straining your freshly infused syrup…directly into the sink! In this recipe, you want to retain the liquid, not the lavender flowers.

Storing Lavender Syrup

Lavender simple syrup can be stored in the refrigerator for up to 3 weeks. After allowing the syrup to cool to room temperature, transfer it to an airtight jar or storage container and store it in the refrigerator to use as desired.

Lavender Simple Syrup

Made with sugar and culinary dried lavender flowers, this lavender simple syrup adds flavor to tea and coffee, moistens cakes, and makes fragrant, floral-inspired cocktails.

Ingredients

Scale

240 milliliters water (1 cup)
5 grams culinary dried lavender flowers (3 tablespoons)
300 grams granulated sugar (1 1/2 cups)


Instructions

In a small saucepan, combine the water and dried lavender.

Bring to a boil, then stir in the granulated sugar and allow it to dissolve.

Simmer mixture over low heat for 10 minutes. Do not boil.

Remove saucepan from heat. Cover and allow to steep for one hour, or until completely cool.

Use a fine mesh strainer to remove the dried lavender.

Use as desired. Store leftover lavender simple syrup in an airtight container in the refrigerator for up to three weeks.
