An easy lavender coffee recipe. Featuring a blend of homemade lavender simple syrup, cold brew coffee, ice, and your favorite dairy or plant-based milk, this coffee with lavender syrup and cold brew makes a refreshing summer beverage option for iced coffee lovers…and lavender lovers, too!
What Inspired This Lavender Coffee Recipe?
As I wrote about in my lavender latte cookies post, I first fell in love with the lavender + coffee combo after trying it at Omi’s Coffee Shop (now closed, sadly) in South Portland, Maine. With its balanced blend of top-quality coffee and house-made lavender syrup, I still reminisce about this particular lavender beverage, which tasted great whether I ordered it hot or over ice.
Although I’ve spotted a few lavender-based drinks on New York coffee shop menus, I’ve never managed to locate one in London. So since it’s (finally) summer and I’ve been craving my seasonal lavender cold brew fix, I decided to create my own.
Lavender Iced Coffee Ingredients
This lavender coffee recipe requires just two ingredients (unsurprisingly, coffee and lavender!) You can also add ice if desired, and/or your favorite milk, cream, or plant milk. Sometimes I also just stir lavender syrup into my iced coffee and drink it black.
Lavender Simple Syrup
I developed this coffee recipe using my own homemade lavender simple syrup recipe. Making your own lavender syrup is super easy—just a few ingredients and an hour or so in the kitchen, and you can make a fragrant, floral sweetener for coffee. (It’s also nice in cocktails, teas, and other beverages.) Homemade lavender syrup lasts for a month or so in the fridge, so I suggest simmering up a batch and keeping it on hand to use as needed.
If you don’t have time to make your own lavender syrup, you can use store-bought lavender cocktail syrup instead.
Cold Brew Coffee
You can make this beverage with a store-bought cold brew (in the US, my preferred brand is Stōk Extra Bold Unsweetened) or homemade cold brew. For a shortcut, stir homemade syrup into cold brew from Starbucks or your favorite local coffee shop.
If I’m feeling particularly lazy, I’ll simply make a pot of coffee, allow it to cool, then add lavender syrup and pour it over ice.
Tips for Making Coffee with Lavender Syrup
Use Unsweetened Coffee – Rather you start with store-bought or homemade cold brew, be sure to choose an unsweetened option. The lavender syrup is plenty sweet on its own.
Add Warm Water – After adding cold lavender syrup to your drinking glass, stir in a tablespoon or two of warm water. This helps to prevent the syrup from seizing when you add ice. You can skip this step if using freshly made, still-warm simple syrup.
Taste and Adjust – Everyone likes different levels of sweetness and lavender. Start with 2 or 3 teaspoons of simple syrup, then adjust as desired to suit your personal preferences.
Choose Quality Lavender – If making your own syrup, or simply sprinkling lavender buds on top of your coffee as a garnish, select a product clearly labelled as edible, food-safe, or culinary grade. Can I Use Hot Coffee?
Absolutely! In lieu of sugar, stir homemade lavender syrup into a mug of hot coffee for sweetness, plus a distinct floral note. Or, order a latte from your favorite coffee shop and dress it up with a spoonful of lavender syrup for a DIY lavender latte.

Ingredients
2–3 teaspoons lavender simple syrup, or to taste
240 milliliters unsweetened cold brew coffee (1 cup)
Whole milk, cream, half-and-half, or plant milk of choice
Instructions
Spoon 2-3 teaspoons lavender simple syrup (or more, to taste) into the bottom of a drinking glass. If your syrup is cold, stir in one tablespoon of warm water to prevent the syrup from seizing when you add the cold ingredients.
Add cold brew coffee, followed by ice.
Stir in whole milk, cream, half-and-half, or your favorite plant milk.
Serve immediately.
