S’mores Golden Graham Bars

Inspired by the classic campfire snack, these s’mores Golden Graham bars feature chunks of milk chocolate, two kinds of marshmallow, and plenty of Golden Grahams cereal. They’re the easiest s’mores treats to make and eat. And unlike the real thing, you can make this cereal treat version with just a heavy-bottomed pot and a basic stovetop burner…no wooden sticks or campfire flames required!

Why Did I Create These S’mores-Inspired Bars?

I’m famously not a fan of nature-y activities. Even as a kid, I preferred art or theatre day camp to summer camps with traditional activities like obstacle courses, swimming, boating, or archery. An “indoor kid” for sure. But just because I’m not a fan of camping and hiking doesn’t mean I’d pass up a classic campfire s’mores. Gooey toasted marshmallow, creamy milk chocolate, and crunchy graham crackers? Perfection. So because I love this flavor combo, I love finding ways to work it into my recipe repertoire. Like my s’mores ice cream recipe, these Golden Graham bars replicate the tastes and textures of the summer camp treat, but I can make them without ever leaving the house!

Key Ingredients 

  • Marshmallows – First, you’ll need the standard kind, to make the gooey, butter-and-marshmallow mixture. You can use mini or jumbo marshmallows, or your own homemade vanilla bean marshmallows. Because marshmallow sizes vary by brand and country, I recommend using a kitchen scale to weigh them rather than depending on volume measurements. In addition, you’ll need dehydrated mini marshmallows. These are tiny, crunchy marshmallow bits (like the kind found in sugary cereals or hot cocoa mix) and unlike standard marshmallows, the dehydrated kind will not melt when stirred into the warm cereal mixture.

S’mores Golden Graham Bars

S’mores treats with milk chocolate, two kinds of marshmallow, and plenty of Golden Grahams cereal.

Ingredients

Nonstick spray, for greasing tin
90 grams unsalted butter (6 tablespoons; 3 ounces)
285 grams marshmallows (10 ounces)
1/2 teaspoon fine sea salt
270 grams Golden Grahams cereal (9 1/2 ounces; about 6 cups)
150 grams milk chocolate chips or chopped milk chocolate (1 cup; 5 1/4 ounces), plus more to decorate
30 grams dehydrated mini marshmallows (3/4 cup), plus more to decorate


Instructions

Line an 8 x 8-inch square tin with parchment in a criss-cross pattern, allowing a 1-inch overhang on all sides. Spray generously with nonstick spray.

In a large, heavy-bottomed stock pot, melt the butter over medium heat.

Add the marshmallows, stirring until completely melted.

Remove from heat. Stir in the fine sea salt.

Add the cereal and stir until well combined, with no dry cereal remaining. Set aside and allow to cool briefly, about 2-3 minutes.

Stir in the milk chocolate chips and dehydrated mini marshmallows.

Pour mixture onto prepared tin. With damp fingertips, press down until evenly distributed and about 1 1/4-inch thick.

Decorate with additional milk chocolate chips and dehydrated mini marshmallows.

Set aside and allow to cool at room temperature for at least 1 hour.

With a sharp, well-oiled chef’s knife, slice into squares and serve.

Layer leftover s’mores treats between sheets of parchment or wax paper. Store in an airtight container at room temperature for up to 3 days.
