Fig galette

I really enjoy baking with figs. In recent months I’ve made fig bars and fig jam, and I’m always on the lookout for new ways to incorporate them into my pastry work.

This fig, goat cheese, and caramelised onion tart was a spur-of-the-moment bake, inspired by some fresh figs gifted to me by a family member. The sweetness of the figs and caramelised onions pairs nicely with the tangy goat cheese, bitter lemon, and buttery puff pastry. When combined, they create the perfect autumn bite.

I served this fig galette for dinner, alongside bowls of homemade butternut squash soup. (Made using this recipe by Love and Lemons, which I highly recommend. It’s so so good!) It’s an easy weeknight meal, and really captures all of the best flavours of the fall.

Fig Galette Tips & Tricks

If you can’t find fresh figs, sliced apples or plums might make a nice substitution. However, I would stick with fig preserves as a base if possible.

I used jarred preserves (the Bonne Maman brand is always a safe bet!) and a store-bought sheet of puff pastry. However, you can certainly make your own fig jam and/or your own puff pastry, if you’re feeling very ambitious!

Description

This fig, goat cheese, and caramelised onion galette with honey and thyme makes for an easy autumn weeknight dinner.


Ingredients

Scale

2 onions, peeled and thinly sliced into rings
Oil or butter, for caramelising onions
1 sheet pre-rolled puff pastry
3-4 tablespoons fig jam or preserves
68 fresh figs, washed and thinly sliced
115 grams crumbled goat cheese (about 4 ounces)
1/2 lemon, very thinly sliced
2 teaspoons fresh thyme leaves (about 34 sprigs)
Salt and pepper, to taste
1 egg, lightly beaten
2 tablespoons honey


Instructions

Peel and slice onions into thin rings. In a large pan, caramelise onions in oil or butter over low heat, about 20 minutes.

While onions caramelise, preheat oven to 205° C / 400° F.

Unroll puff pastry and spread with fig preserves, allowing a 1.5-centimeter / 1/2-inch border around the edges. Layer onions on top of fig preserves, followed by sliced fresh figs, goat cheese, lemon, and thyme. Season with salt and pepper.

With a pastry brush, brush egg wash along the pastry border, then turn up edges and crimp with a fork. Brush pastry with more egg wash.

Bake galette for approximately 15 minutes, or until pastry is flaky and golden brown.

Remove tart from oven and drizzle with honey. Slice and serve immediately.

Tart is best served on the day it is made, but can be stored in the refrigerator for up to one day. Gently rewarm leftovers in the oven prior to serving.
