Over the years, both at pastry school and in my work as a professional recipe developer, I’ve had the opportunity to test and work with many different brands and products. Some things I only try once, while others I find myself returning to over and over again.
Below are collections of some of my favorite things for breadmaking; cake and cookie decorating; chocolatework; macaron-making; and candy and confectionery, as well as the staple ingredients I always have in my kitchen cabinet and the general tools which remain ever-present on my countertop! I’ve also included a couple of “kitchen-adjacent” items that make long days in the kitchen more comfortable and fun.

Rebecca Frey is a freelance recipe developer, food writer, photographer, stylist, and pastry chef. She earned the Diplôme de Pâtisserie (French Pastry Techniques Diploma) from Le Cordon Bleu London in 2020 and an MSc in Culinary Innovation from Birkbeck, University of London in 2022, where she focused her dissertation research on Pennsylvania Dutch recipes.
