Why Make This Rose Simple Syrup Recipe?
My rose simple syrup recipe requires only three ingredients (granulated sugar, water, dried rose petals) and about 15 minutes of prep time, plus an hour or so for the petals to steep in the syrup as it cools.
Simple syrup is a culinary and cocktail staple made from sugar and water, and often infused with other ingredients to impart flavor. Because of its liquid form, simple syrup offers one specific advantage over granulated sugar: it quickly and evenly distributes sweetness and flavor throughout your beverage (or baked good if applying with a pastry brush!)
You’ll often find rose syrup behind the bar, where it’s used to create a variety of floral and botanical-inspired cocktails. Pastry chefs also use simple syrup, soaking cakes and cupcakes to keep them ultra-moist.
How to Make Rose Syrup
To make this rose simple syrup recipe, you’ll start by boiling granulated sugar, dried rose petals, and water in a saucepan on the stovetop. After allowing the petals to steep as the syrup cools (about an hour or so), you’ll pass it through a fine mesh strainer to separate the water-logged roses from the syrup. The result? A sweet, vibrant pink syrup which keeps for weeks in the fridge.
And that’s it! It’s not difficult to make your own simple syrup, and it’s cheaper than purchasing the store-bought stuff. Decent rose drink syrups cost upwards of $15-20 on Amazon, and really only serve one purpose: sweetening drinks. In contrast, you can buy a bag of dried rose petals for under $10, and use them for all sorts of things, including baked goods, simmer pots, chocolates, garnishes, and more.
Uses for Rose Flavored Syrup
When you hear “simple syrup,” you probably think “cocktail ingredient.” But there are so many things you can do with this homemade sweetener. You can:
- Brush it on cakes, cupcakes, and other baked goods as a soaking syrup
- Stir it into tea and coffee (it’s great in hot and iced beverages) or a pitcher of lemonade
- Drizzle rose syrup over pancakes, French toast, or waffles (don’t forget a few dried petals for garnish!)
- Stir it into Greek yogurt, cottage cheese, or oatmeal for a floral breakast twist
- Make cocktails and mocktails, like a rose mojito, strawberry rose bramble, or blushing ginger rose fizz
Ingredients for Making Rose Simple Syrup

To make rose petal syrup, you’ll need just three ingredients: water, granulated sugar (caster will also work just fine!) and dried rose petals.
When choosing dried rose petals, select a product clearly marked as food-safe or culinary grade, or one indicating that it can be used in baking. Do not use anything not labelled as such. And do not use the petals from a bouquet of store-bought roses—it’s impossible to know whether these have been treated with pesticides or chemicals, rendering them inedible. Instead, save the flowers to make a homemade simmer pot, or dry the petals for potpourri instead.

Rose Simple Syrup
A rose simple syrup recipe made from dried rose petals, water, and granulated sugar.

Ingredients
220 milliliters water (1 cup)
3 tablespoons culinary grade dried rose petals
300 grams granulated sugar (1 1/2 cups)
Instructions
In a small saucepan, combine the water and dried rose petals.
Bring to a boil, then stir in the granulated sugar and allow it to dissolve.
Simmer over low heat for 10 minutes.
Remove from heat. Allow petals to steep in the syrup for one hour, or until completely cool.
Use a fine mesh strainer to remove the petals.
Use rose simple syrup as desired. Store leftover syrup in an airtight container in the refrigerator for up to three weeks.
