I recently attended an amazing sugar hydrangea course at Julia Fedorova Cakes in New York City. I’ve worked with pulled and blown sugar in the past, but gumpaste flowers are a completely different type of sugarwork. I’d never it tried before and was excited to give it a try.
On the first day, we began by using gum paste, veiners, and cutters to sculpt each individual petal and leaf. We attached each piece to a thin metal wire:
Once finished, the petals and leaves were allowed to dry overnight.
The second day of the course focused on coloring the leaves and petals, and assembling our bouquets. We used petal dust to paint each leaf and petal to achieve a realistic color, painting it on with a soft makeup brush:
Once we’d painted each piece, we began the process of putting the petals together to create the hydrangea flowers:
And then, putting the flowers together to create bouquets:

I had so much fun taking this class, and would recommend it to anyone looking for a new skill to add to their cake decorating toolbox! I was so inspired by Chef Julia’s work (below), and am looking forward to taking more of her sugar classes in the future. Plus I can’t wait to learn how to make roses!
