It’s both easy and affordable to make your own lavender simple syrup at home. With just a few ingredients and an hour or so in the kitchen, you can create a versatile sweetener for coffee, cakes, and cocktails. Add a fragrant floral note to your culinary creations by brushing lavender syrup on homemade baked goods, stirring it into a pitcher of cold brew or lemonade, or making fancy mixed drinks to impress summer cocktail party guests.
As a bonus, you can store lavender simple syrup in the fridge for several weeks. I suggest making a batch to keep it on hand for flavoring iced drinks and cocktails all summer long.
How to Make Lavender Simple Syrup
My recipe requires just three ingredients: dried lavender flowers, granulated sugar, and water. And aside from a saucepan and a fine mesh strainer, you won’t need any fancy tools or equipment to whip up a batch of this sweet syrup.
To make lavender syrup, you’ll start by stirring together culinary-grade dried lavender flowers and water and warming these in a saucepan. Then you’ll stir in the granulated sugar and allow it to dissolve, simmer the mixture for 10 minutes, and steep for about an hour. After steeping, simply pass the infused syrup through a strainer to remove the flowers.
And that’s it! Making lavender simple syrup is actually very easy to do. In addition to the ingredients and method, I’ve included step-by-step process photos in the recipe below.
Uses for Homemade Lavender Syrup
- Brush it on homemade cakes and cupcakes as a soaking syrup. I think lavender-soaked cakes pair especially well with my Earl Grey and white chocolate ganache.
- Stir it into tea or cold brew coffee (it’s great with hot or iced drinks!)
- Make a pitcher of lavender lemonade for a refreshing summer beverage
- Drizzle it on Greek yogurt, cottage cheese, or oatmeal for breakfast
- Treat yourself to a fancy lavender cocktail
Choosing Your Lavender Flowers
The key to creating a vibrant homemade lavender simple syrup? Choosing the best dried lavender.
Remember that not all dried flower products are suitable for human consumption. When purchasing your dried lavender flowers, select a product clearly labelled as edible, food-safe, or culinary grade, or one indicating that it can be used in baking. Do not use anything not marked as such.

Lavender Simple Syrup Recipe Tips
Pay attention during the straining step! Don’t make the all-too-common cooking mistake of straining your freshly infused syrup…directly into the sink! In this recipe, you want to retain the liquid, not the lavender flowers.
Storing Lavender Syrup
Lavender simple syrup can be stored in the refrigerator for at least 3 weeks. After allowing the finished syrup to cool to room temperature, transfer it to an airtight jar or storage container and store it in the refrigerator to use as desired.

- Yield: Approx. 380 ml / 1 1/4 cups syrup

Ingredients
220 milliliters water (1 cup)
3 tablespoons culinary grade dried lavender flowers
300 grams granulated sugar (1 1/2 cups)
Instructions
In a small saucepan, combine the water and dried lavender.
Bring to a boil, then stir in the granulated sugar and allow it to dissolve.
Simmer mixture over low heat for 10 minutes. Do not boil.
Remove saucepan from heat. Cover and allow to steep for one hour, or until completely cool.
Use a fine mesh strainer to remove the dried lavender.
Use as desired. Store leftover lavender simple syrup in an airtight container in the refrigerator for up to three weeks.
