June is Pride Month, and the flags and decorations adorning the city always inspire me to find new and interesting ways to introduce rainbows into my baking projects. Over the years I’ve amassed quite a collection of original, rainbow-inspired recipes, from heart-shaped candy mints to birthday cake marshmallows to rainbow whoopie pies.
Of course I’ve created plenty of cookie recipes, too, so this year I thought it might be fun to assemble all of them into a rainbow-themed cookie box:
All of these cookies freeze very well, so it’s easy to bake each recipe individually. Simply layer between sheets of parchment then pop the cookies in the freezer in an airtight container until ready to use. Once you’ve worked your way through all of the recipes, simply thaw the cookies and assemble the boxes. (That’s how I did it!)
I’ve piled all of my rainbow cookies into a colorfully-striped cookie tin (available for purchase at Amazon), which I lined with rainbow-speckled tissue paper. For gifting, the finished product would be especially pretty with a huge rainbow ribbon bow on top!
The Recipes
Funfetti Shortbread
Buttery, slice-and-bake shortbread chock full of rainbow sprinkles!
Checkerboard Cookies
Classic French sablé biscuits in a brightly colored checkerboard pattern. A sharp chef’s knife is an absolute must for this recipe!
Slice and Bake Rainbow Heart Cookies
Classic slice-and-bake sugar cookies rolled in rainbow nonpareils, with a fun rainbow heart surprise in the middle. You’ll need a heart cutter for this recipe.
Rainbow Chocolate Chip Biscotti
Crunchy chocolate chip biscotti cookies, topped with rainbow nonpareils.
Rainbow Donkey Piñata Cookies
Rainbow sugar cookie dough cut into donkey shapes and sprinkled with rainbow nonpareils. To cut the cookies, I used Ann Clark’s donkey-shaped cookie cutter.
Rainbow Buttercream Cookies
Heart shaped cookies topped with rainbow sprinkles, with swirls of rainbow buttercream sandwiched in between. I made these heart cookies using this classic sugar cookie dough, and combined it with my go-to rainbow buttercream.
You’ll need a set of heart-shaped cutters for this recipe, along with piping tips and piping bags for the rainbow buttercream.
