Made with strawberries, pineapple, peanuts, chocolate, bananas, and Greek yogurt, this breakfast parfait offers a healthy alternative to a banana split.
Why Make This Breakfast Parfait?
This ice cream sundae-inspired yogurt parfait recipe boasts all of the elements of a classic banana split: crushed pineapple, peanuts, strawberries, and chocolate. But, I’ve substituted vanilla, chocolate, and strawberry Greek yogurt in place of the ice cream, and swirls of plain yogurt instead of whipped cream.
This healthy yogurt parfait makes a sweet, filling breakfast, and it’s also a good option for fulfilling an ice cream craving without breaking your calorie budget. In addition to offering a less calorie-dense alternative, the yogurt provides a protein boost, as well as probiotics beneficial for gut health and digestion.
I also love this parfait recipe because it’s easy to make, and you can prepare and assemble all of the components in less than half an hour. This parfait recipe is also versatile and highly customizable: try adding additional fruits like blueberries or raspberries; swapping the chopped chocolate for cacao nibs; using fresh pineapple instead of canned; layering in strawberry jam; or topping your parfait with a swirl of homemade coconut whipped cream.
Banana Split Parfait Ingredients
To make this healthy yogurt parfait recipe, you’ll need to add the following to your grocery list:
- Yogurt – You’ll need one container of vanilla and one strawberry, plus two containers of plain Greek yogurt.
- Banana – One ripe banana will do it, but feel free to add a second if you’re a banana fan. Be sure to reserve a few slices to garnish the finished parfaits.
- Strawberries – Hulled, diced fresh strawberries work best in this parfait recipe. Don’t use frozen.
- Peanuts – I prefer salted peanuts for a salty-sweet contrast, but you can substitute unsalted if you’d like.
- Chopped dark chocolate – Or miniature chocolate chips. You can also use cacao nibs for a healthier option.
- Pineapple – Crushed or diced canned pineapple are both equally good options. Fresh will also work!
Breakfast Parfait Tools and Equipment
I assembled my parfaits in two large, red wine glasses. You can also use stemless wine glasses, parfait glasses, water glasses, or mason jars instead.
Other than parfait glasses, the only special “equipment” you’ll need to make this recipe is a disposable piping bag with a star tip. If you don’t have a piping bag, you can create a makeshift version by cutting the corner off of a large Ziploc bag, filling it with your yogurt, and using it to make a swirl. And if you don’t care about a “whipped cream” look, simply spoon the plain yogurt on the top of the parfait before adding your garnishes.
Yogurt Parfait Recipe Tips and Tricks
This recipe makes two 6-inch tall parfaits, so divide the fruit, yogurt, and other toppings accordingly. Use half for the first recipe, and save the remainder for your second glass. If desired, you can also make four smaller parfaits.
Be sure to mix sweetened vanilla yogurt with the cocoa powder, or the chocolate yogurt will be very bitter. Or, if you can find it, feel free to skip the cocoa powder and substitute chocolate yogurt instead.

Ingredients
2 150-gram (or 6-ounce) containers plain Greek yogurt
1 150-gram (or 6-ounce) container sweetened vanilla yogurt
1 teaspoon unsweetened cocoa powder
1 227-gram (or 8-ounce) can crushed pineapple, or pineapple chunks
40 grams chopped dark chocolate (1/3 cup)
1 1 150-gram (or 6-ounce) container strawberry yogurt
125 grams diced strawberries (1 cup)
1 banana, peeled and sliced
70 grams salted chopped peanuts (1/2 cup)
Instructions
Transfer Greek yogurt to a disposable piping bag fitted with a star tip. Set aside.
Spoon half of the vanilla yogurt into a small bowl.
Whisk in the cocoa powder, and set aside.
Spoon the crushed pineapple into the bottom of each parfait glass, dividing it equally between the two.
Add the plain vanilla yogurt .
Add the chopped dark chocolate.
Add the strawberry yogurt.
Add the diced strawberries.
Add the banana, reserving a few slices for the tops of the parfaits.
Add the peanuts.
Add the chocolate yogurt.
Pipe a swirl of of Greek yogurt on top of the peanuts.
Garnish with reserved chocolate and bananas.
Serve immediately.
